Stuffed Falafel Balls

Ingredients:

  • 2 cups falafel mix (about 10 ounces)
  • 1/3 cup carefully fell apart feta cheese (about 2 ounces)
  • 1/3 cup carefully sliced roasted red peppers (about 3 ounces)
  • 1/4 cup parsley leaves, carefully sliced
  • 2 tablespoons grated Parmesan
  • 2 teaspoons extra-virgin olive oil
  • 2 teaspoons red white wine vinegar
  • 1 teaspoon dried mint (rubbed in between your fingers)
  • 1/4 cup tahini
  • Juice of half a lemon
  • Kosher salt
  • Vegetable oil, for frying
  • Cucumber pieces and lemon wedges, for serving
